Sunday Brunch Tater Tot Bake

This tater tot breakfast casserole is a breeze to throw together and is A MUST for brunch any day of the week, a holiday, gathering, or make ahead meal!


I am thrilled to share my recipe for Sunday Brunch Tater Tot Bake that is IMPOSSIBLE TO MESS UP!


The first time I made it, I scoured Pinterest for hours absorbing recipes that almost worked with what I was trying to accomplish, but nothing quite added up. I decided to work in terms of *serving sizes* for each ingredient given.


My first attempt was a make-ahead breakfast for Christmas Morning.


Christmas breakfast is important to me, and this year (2020), I wanted to RELAX all day.


I grew up in New Mexico, and Mexican food is something I must have on Christmas Day - no exceptions! I decided to use chorizo and fiesta blend cheese for my first attempt.



A few notes about the recipe:



  • ANY meat, or none at all will do for this recipe. Suggestions: Bacon, Canadian Bacon, Sausage, Chorizo, Ground Beef, Chicken


  • Get Creative! I've only made this recipe a handful of times, but my next attempt will include vegetables. Stay tuned for updates.


  • Line your baking dish with aluminum foil for the ultimate lazy meal! Save time on meal prep AND dishes? What could possibly go wrong?


  • Dips and sauces are encouraged! We did country gravy, salsa, hot sauce, ketchup and sour cream. They were all great.





Sunday Brunch Tater Tot Bake


8 Servings breakfast meat of your choice, cooked

8 Eggs, beaten

1 (8oz) package cheddar cheese

1/2 Cup milk

1 tablespoon each: garlic powder, onion powder, pepper

Salt to taste

6 cups Frozen Tater Tots



Prep:

1.) In a large mixing bowl, mix together the eggs, milk, cheese, garlic powder, onion powder, salt and pepper, and meat.


2.) When the wet ingredients are well blended, fold in the frozen tater tots and gently mix.


3.) Add the mixture to a 9"x11" baking dish and bake at 375 degrees for about an hour.


It's Literally THAT EASY. Now sit back, enjoy a cup of coffee and don't worry about breakfast!
